  • complete control over the composition without added preservatives.

Recipe for homemade almond butter

For the basic recipe you only need almonds and powerful mixer. The flavor and color of the resulting butter will vary depending on which one you use peeled or unpeeled almonds:

  • Peeled almonds: milder taste, creamier consistency.

  • Unpeeled almonds: more antioxidants, more pronounced taste and darker color.

Ingredients

  • 400 g of almonds

  • pinch of salt (optional)

Step by step procedure

  1. Preparation of almonds

    • Roasted butter: Preheat the oven to 175-180 °C (fan oven to 160-170 °C). Bake the almonds for 8-10 minutes and let cool briefly. Roasting enhances the flavor and makes mixing easier.

    • Raw butter: Soak the almonds for 6-8 hours and then dry them well to retain the maximum amount of nutrients and enzymes.

  2. Mixing
    Place the almonds in a blender or food processor. First it arises almond flour, then the matter gradually liquefies. Blend for 5-20 minutes depending on the power of the mixer, stop occasionally and use a spatula to wipe the almonds off the walls of the container. If the mixture is too thick, add a teaspoon of neutral oil (e.g. rapeseed).

  3. Seasoning
    When the butter is smooth and creamy, you can taste it:

    • Sweet: cinnamon, vanilla, honey, agave syrup, stevia, cocoa, chocolate pieces.

    • Salty: a pinch of quality sea salt.

  4. Storage
    Store the butter in an airtight container. Roasted butter can be kept in the refrigerator for several months, use raw butter within a few weeks. Always store in the refrigerator in summer.

Almond butter is versatile ingredient, which is suitable for both sweet and savory recipes.
